  1. Quinoa Salad with Avocado and Black Beans:
    • Ingredients:
      • 1 cup quinoa
      • 1 can black beans, drained and rinsed
      • 1 avocado, diced
      • 1 red bell pepper, diced
      • 1/4 cup chopped fresh cilantro
      • Juice of 1 lime
      • Salt and pepper to taste

 

 Instructions:

      1. Cook quinoa according to package instructions and let it cool.
      2. In a large bowl, combine cooked quinoa, black beans, diced avocado, diced red bell pepper, and chopped cilantro.
      3. Drizzle lime juice over the salad and toss to combine.
      4. Season with salt and pepper to taste.
